Raw zucchini noodles with avocado pesto

This dish is simple and satisfying. If you are in the transitioning phase you can accompany it with some cooked carbs for extra calories.

Ingredients:

  • 1-2 Zucchini
  • 1 Avocado
  • 15-20 Fresh basil leaves or to your taste
  • 1 Clove garlic
  • As many honey tomatoes and sun dried tomatoes as you wish

Method:

  • Spiralize zucchini using julienne peeler or spiralizer
  • Combine: Chopped basil leaves, Mashed avocado and crushed garlic.
  • Massage your avocado pesto into your noodles and decorate with tomatoes and sun dried tomatoes. Enjoy!
