This dish is simple and satisfying. If you are in the transitioning phase you can accompany it with some cooked carbs for extra calories.
Ingredients:
- 1-2 Zucchini
- 1 Avocado
- 15-20 Fresh basil leaves or to your taste
- 1 Clove garlic
- As many honey tomatoes and sun dried tomatoes as you wish
Method:
- Spiralize zucchini using julienne peeler or spiralizer
- Combine: Chopped basil leaves, Mashed avocado and crushed garlic.
- Massage your avocado pesto into your noodles and decorate with tomatoes and sun dried tomatoes. Enjoy!
